You will need: young nettle, green onions, dill, parsley, vegetable oil, pepper, salt.
Wash the nettle leaves thoroughly and scald with boiling water, chop finely, combine with finely chopped dill, parsley and green onions, add salt, pepper and season with oil.

NETTLE SALAD WITH EGG

Place nettle leaves in boiling water for 1-2 minutes and place on a sieve. Then chop, season with vinegar, place slices of boiled eggs on top, pour over sour cream.

Young nettle - 600 g, eggs - 4 pcs., sour cream - 80 g, vinegar, salt to taste.

PICKLED NETTLE

You will need 100 g of salt, 5 kg of nettle, 2 g of caraway seeds, 150 g of apples, 150 g of carrots, bay leaf, allspice and 50 g of cranberries or lingonberries.

Wash young nettle shoots and place in an enamel bowl along with apples, carrots, cranberries or lingonberries, bay leaves, cumin, salt and pepper. Then apply pressure. After 2 weeks, nettle can be used in cabbage soup, for seasoning fish and meat dishes.

PLANTAIN AND NETTLE SALAD WITH ONION

Place plantain and nettle in boiling water for 1 minute, place in a sieve, chop and add chopped onion and horseradish. Season with salt and dill, sprinkle with chopped eggs, pour over sour cream.

Young plantain leaves - 250 g
Nettle - 200 g
Onion - 250 g
Horseradish - 100 g
Eggs - 2 pcs.

Another option for the first one - nettle chorba(Bulgarians call her chorba from kopriv, and Romanians - ciorbă de urzici). Here the role of nettle is different than in cabbage soup - it is not added to the already prepared broth, but, as it were, “creates” it itself. Young nettle leaves are boiled in salted water. Then add a tablespoon of flour, onions, and a pinch of red pepper to the vegetable oil heated in a frying pan. When the flour is browned, add a little nettle broth to the frying pan and, after mixing well, put it all in a pan with boiled nettles. Immediately add either rice (40-50 grams) or cheese. In the first case, the soup is boiled until the rice is ready, in the second, the cheese is boiled quickly (literally 1-2 minutes). At the end, the chorba is acidified with kvass, vinegar or lemon juice.

Advice: To add satiety to the chorba (in the case of feta cheese), you can add potatoes, pieces of boiled chicken and/or hard-boiled eggs.

You can cook it from nettles cream soup. At the bottom of the pan, simmer the onion and garlic in vegetable oil, add the prepared vegetable broth, potatoes and nettle leaves, bring to a boil, then simmer over low heat until the potatoes soften. The proportions can be different: someone adds 2 parts of cereal to 3 parts of nettle, someone puts 100 grams of rice and five eggs per kilogram of nettle.

Take:

  • 3 cloves garlic
  • 100 ml olive oil
  • 50.0 balsamic vinegar
  • 100.0 grated parmesan
  • 150.0 chopped walnuts
  • Place all ingredients in a blender and blend well.
  • Roll up into 0.5 liter jars and sterilize for 10 minutes.
  • Store in the refrigerator.

This nettle pesto can be added to any hot dishes 2 minutes before cooking, as well as cold appetizers and simply as a seasoning for side dishes.

Who shouldn't eat nettles?

Despite all the usefulness of nettle, it has a number of contraindications and side effects.

It enhances blood clotting and thickens it, so dishes made from nettle are contraindicated for people with varicose veins, thrombophlebitis, atherosclerosis, hypertension, and bleeding caused by diseases of the uterus and appendages.

Also, pregnant women should not eat nettle.
